About Me

My name is Denise and I have an autoimmune condition of the thyroid called Hashimoto's Disease. This diagnosis brings a different set of challenges for each patient although most of us have to make major changes in our diet. Until recently, my diet was high in gluten, dairy, soy and corn. In fact, I didn't even know the names of 75% of the items in the fresh food isle! That's been the biggest obstacle on my quest to wellness. It is the reason I started this blog; to find and share recipes without those inflammatory ingredients. I hope you enjoy them as much as I do! Naturally Sweet Baked Apples

I love the taste and smell of baked apples! 

I find it odd that all of the recipes I have found include brown sugar.  If you use the right type of apple, they will be naturally sweet.  And instead of using butter -- you guessed it -- ghee!  Here's the recipe I used for dinner:


Ingredients:
5-6 sweet apples; peeled, cored, and chopped
2 teaspoons ghee, melted
ground cinnamon 

Place the apples in a covered baking dish; pour in the melted ghee and sprinkle cinnamon to taste.  Cover the dish and bake at 350* for about 45 minutes.  

Simple, right?  That's all you need to add a sweet, healthy side dish to your meal.
